BRIEF:
Turn an aging winery into a timeless destination, not just another cellar door.
RESPONSE:
The owners entrusted us with the transformation of the cellar door and vineyard, a project that filled us with both excitement and a sense of challenge due to its extensive scope. My initial visit to the site revealed a large tin shed enveloped in an atmosphere of neglect, yet upon stepping inside, I felt an immediate surge of inspiration and possibilities. The presence of magnificent original timber beams as structural supports captivated me, becoming one of my cherished design elements.
To accentuate the beauty of these beams, we made strategic lighting changes, enhancing their visual impact. Additionally, we collaborated with a local ironmaster to bring my vision to life, crafting a bespoke entrance chandelier for the Vines Restaurant. As part of the project, we partitioned the expansive space to create distinct areas for the cellar door, restaurant, indoor and outdoor seating, conference rooms, function rooms, amenities, and a well-equipped chef’s kitchen with ample storage. Preserving the character of the space, we meticulously restored the original concrete floors, featuring stunning parquetry inserts.
The cellar door exudes a warm and inviting ambiance, akin to a comfortable country lounge, offering guests a relaxing setting with scenic views of the magnificent Coolmore Horse Stud. The joinery for the cellar door and Vines Restaurant was meticulously designed by The Essential Detail, reflecting our commitment to detail and craftsmanship. As for the restaurant, named Vines, we sought to create an eclectic atmosphere, incorporating tables and chairs that prioritize comfort for extended enjoyment. Grand mirrors and specially commissioned artworks infuse the vast space with character and intrigue. The restaurant’s kitchen was carefully designed to accommodate various dining styles, from restaurant service to café offerings, tapas, and catering for special events throughout the day.
Externally, we embarked on a transformative journey, introducing elements to enhance drama and maximise natural light. Now, as you drive along the Golden Highway, you are greeted by the inviting hues of russet and charcoal, beckoning you to explore and indulge in the remarkable establishment we have crafted.
